Preparation and serving methods
Rinse beets gently under cold water without tearing the skin, which helps to preserve the health-promoting pigments inside. Wearing kitchen gloves is a good idea when handling your beets. Simply rub some lemon juice on your hands to remove beet juice stains.
Beets can be enjoyed raw (grated over a salad), steamed, or made into delicious beet burgers.
Selection and storage
Select small or medium-sized beets with firm roots, smooth skin and deep color. Smaller, younger beets may be so tender that peeling won't be needed after they are cooked.
